Stay safe!
As something of a professional garden invader, there are some deterrants that I find keep my wandering hands at bay during the night cycle. So, I’ll share my wisdom with you in my How to Protect Your Garden in Grow a Garden 2 guide.

The layout of your garden will impact how easy it is to penetrate and steal from. Some things I’ve noticed are that valuable crops should stay central, and tall crops that grow wide benefit from being at your plot’s edge.
This works because you can guard central and valuable crops amongst lesser-profitable fruits, so stealers accidentily pick those instead of the high-value ones. Also, all players must enter from a side and not the centre, meaning they’re more likely to fill up their stealing capacity on weaker value fruits before making it to the centre of your garden.
As for the overhanging crops, such as grapes, mangoes, chillies, etc, these typically grow wide outside the bounds of your garden, meaning players cannot pick them whatsoever. If the fruits grow out of their reach, the game will tell them they have to be in your garden to collect them, making it a foolproof way to secure your crops.
If you’ve checked the Props store, you may notice the Roleplay Crate has a 15.53% chance to drop a wall when opening. Cladding the outskirts of your Garden is a pretty unique and viable way to prevent unwanted entry, but this falls entirely to RNG chance, and quickly becomes expensive, as each crate costs 300,000$ and time-intensive with fickle shop restocks.
However, a cheaper and more profitable way is to layer Bamboo around the outskirts of your garden instead. Sure, these can be stolen, but they take a long time to uproot due to their being a one-time harvest. So, you have the option to harvest them yourself or leave them as a faux-gate.

There is also a pet that aids in thievery if you wish to dabble in that, too.
A boring and obvious approach, but if you don’t leave your garden, it remains locked, and other players cannot enter and take anything.
The most secure way to lock down your garden is to play on a private server. Sure, this means your weather and event frequency drop, but you’ll still have access to the same global stock shops, and will be able to leave your garden freely at night time without risk of thieves. This is a double-edged sword, though, as you can’t steal from anyone not in your server.
