The first thing you should be doing on every level is checking the picture at the top of the screen to see what you’re supposed to be making. Look at how the colors interact, how they cross over and which parts of the image they color. Then look at the rolls you’ve got and figure out how you need to proceed.
It’s usually pretty obvious when you’ve made a mistake. To rectify it, just tap on the color again to roll it back to its starting position. There isn’t any penalty for doing that, so feel free to roll back as many times as you want in order to get to the correct solution.
