To answer my own question here...

I just sort of figured this out but maybe this will be helpful to others. It seems that if you buy up a bunch of recipes and then go back and play some of the earlier levels, its easier to get the expert score. 

Hope someone can use this info!

Just as a little addition - if you replay levels later on to get expert score, you won't get the expert medal for that restaurant, even if you have expert scores on all levels in the end - I dont know if Sandlotgames is going to fix this, but right now you have to replay any level immediately to get expert score if you want the medal/trophy.

i couldn't get expert in level 5 of the burger shop no matter what i did! really weird because i could get expert on every other level...any tips? i did try to buy other recipes but there were barely any customers and none of them ordered the new recipes!

try sitting around and waiting for 4 customers to come at once, then you can do some things (like put down all the burger buns) in a row and get the chain bonus. maybe that will help.

Also, if you have bought the TV at that point, use it.  The TV is very helpful in maximizing customers' hearts.  Try to figure out which channels which customers like and then you can get the maximum amount of tips.  :)

That's true.  I'm really pissed about this.  Also, replaying the levels do not make things easier since you don't get to choose the recipes/equipments again.  I didn't plan well for Jill's cakeshop earlier on, so it was impossible for me to get expert on one of the levels.  Obviously they didn't spend enough time thinking things through.

As for tips on getting expert scores in Burger and Sushi restaurants, always buy the new recipe before starting each level and buy the TV as soon as possible because it helps a lot.  No need to get the microwave until you've upgraded the TV all the way.  Also, keep in mind that some levels are really hard, and the only way to get expert score on those takes lots of practise.
